How to make The Leblon Caipirinha Cocktail:
In a shaker, muddle the lime and sugar or simple syrup.
Fill with ice and add the cachaça.

Bright, brilliant straw yellow. Broad and intense nose with notes of blossoms and tropical fruit. Full, soft palate with lingering aftertaste.

The 1687 Brown Ale pours a rich dense brown shade with a faint citrus aroma. This brewery uses both malted and roasted barley in this beer for a total of seven types of barley which allow for a wonderfully complex taste, yet well balanced.  Of particular surprise is just how clean this beer finishes, leaving no residual on the tongue. Interestingly enough, the 1687 Brown Ale also enjoys a very light mouth feel and at 5.5% ABV it enjoys a year round spot at the bar.

The Royal Charter Pale Ale beer enjoys a citrus nose and is designed to be a sessionable beer. 35 years of Paella tradition celebrated

      Doing a traditional paella makes the meal an all day affair, but one that the entire family pitches in to help out with. Some go shopping for the produce and seafood, others set to chopping wood for the fire. This year I was given one of the most crucial tasks: supplying the wine. The actual cooking is all done on an open fire started several hours beforehand to get a bed of coals laid to ensure a proper cooking temperature.

    Creation of the paella itself has always been the responsibility of my uncle. When following his method, there are absolutely no cut corners. He even makes the broth from scratch that same morning! Two copper pans were placed on metal tripods (specifically built for my uncle for this purpose), and rice and stock were added. As the rice begins to cook, two people circle around the pans gently placing clams, mussels, lobster, shrimp, chorizo and chicken into the pans. Before long the pans begin to look like a mosaic of shellfish, with everything arranged to not only taste good, but look good as well. In a family where everyone thinks themselves a great cook, no party is complete without lighthearted teasing, and calls ring out from the deck to the firepit, reminding the cooks that the family would like to eat sometime before midnight.

    Ordinarily Italian wine takes precedence at a family meal, but in keeping with the theme of the day, Spanish rosés covered the table, and before the paella even came together in the pan, wine began to flow freely. On a sunny day with the temperature reaching the 90s, some cold rosé was needed, especially to those of us manning the fire!  

    By the time the cooking is done, darkness has begun to fall and rosé is flowing. With great ceremony, the two massive pans are set on the table, columns of steam wafting up from the rice. We open bottles of txakolina, the crisp, wonderfully effervescent Basque wine that goes down perfectly on a hot night and toast to my uncle, to each other, and to the day. Plates are loaded up and everyone digs in. It is, as it has been every year since i can remember, a delicious success.

  No one is quite sure of how the tradition of the annual paella party came into being, but for the past 35 years it has been a highlight of my family's summer.

At first swirl, aromatics of white pear, pineapple and banana spring forward from the glass. On the palate, the wine is refreshing with flavors of ripe tangerine and peaches. The mouthfeel is lively, but rich and has a subtle creaminess.

Sauvignon Blanc 2015 $16.99

On the nose, This wine presents aromas of honeydew melon, ripe pear and some floral notes. On the palate, flavors of Meyer lemons, tangerines and mineral notes come through with a slightly creamy, but lively finish.

Zinfandel 2014 $24.99

This vintage presents enticing aromatics of raspberries, cranberries and a hint of toast and pepper nuances. On the palate, you’ll experience flavors of black cherry, cranberry and spicy dark chocolate. The wine is complex, but does not burden the palate with too much of any single character - everything is in balance and carries the right amount of finesse. The tannins are silky and smooth with refined notes that please the senses.

Cabernet Sauvignon 2012 $24.99
The 2012 vintage is a true standout. This impeccable wine displays wonderful aromatics of cherry, black currant and black olive notes. Additional airing reveals dried floral, allspice and hints of nutmeg and juniper. The palate is full-bodied and fleshy with excellent tannin and structure. The wine is silky and smooth with superb balance - something we work tirelessly to achieve. The finish lingers on showing great texture and charm.

Originally brewed for sailors on shipping routes between England and India, British IPAs are known for their strong hop bitterness, which were added as a preservative for the long voyage. The American adaptation is decidedly stronger and offers a more robust hop bite. Back East IPA is no exception. Traveling to Spain with Len (The Wine Tutor) Gulino through pictures

Our Wine school teacher, Len Gulino is currently brushing up on Spain for our upcoming fall semester and what better way to do it than spending some time face to face with some of the country's winemakers and taking in their prospective on what they do so well. 

You will see that len not only enjoys the wines but also the food and culture that is attached to it. We are confident that looking through his experiences will motivate some of our followers to start planning their own visit. i know we are!

The American style is somewhat unique because so many of the brown bodied beers are of an English style, which tend to be sweeter. The Brown Ale pours a rich dense brown shade with a faint roasted and tasted aroma.  The brewery uses both malted and roasted barley in the beer and a total of seven types of barley allow for a wonderfully complex taste, yet well balanced.

One can not help but enjoy the aroma of the citrus and pine from our fresh, finishing hops.  Indeed, a familiar nose for most American India Pale styles. Once the liquid reaches your tongue, our hops are loud and clear and as this IPA reaches the back of your palate, the hops only become more flavorful and intense, although we brew this to yield a full backbone of malted barley to hide all the bitterness.

This west coast styled beer pours a distinctive amber shade and enjoys a nice head of foam.   The Royal Charter Pale Ale beer enjoys a citrus nose and is designed to be a sessionable beer.
